ORIGINAL GRAVITY READING (OG) The original gravity is the first reading of the wort (the liquid in your fermenter) before yeast is added. Take this reading when all the water has been added to the wort to achieve the desired amount (i.e. 5 gallons). Take a sample out of the wort and put into a flask or graduated cylinder and set it aside for a while to cool to about 68F.

FINAL GRAVITY READING (FG) The second reading is of the finished beer. This is taken just before you bottle your beer. This reading is called the FINAL GRAVITY.

The reading below is of the finished beer's alcohol by weight, alcohol by volume and calorie content.

NOTE: Specific gravity measurements can be entered in several ways. the following all mean the same thing; 1045, 1.045, 45. When an SG is computed, it is reportd in the first format.
